I'm not really the "recipe blog poster" but people have requested that I share some of my experiments with healthy recipes so here goes...
Banana Bread -- GLUTEN FREE and ORGANIC
(FYI - I like to use organic ingredients because it is the best way to get the maximum nutrition out of what I make but I'm sure the recipe will work the same with conventional products)
Ingredients:
2 bananas (mashed)
1/2 cup raw local honey

1/2 tsp. baking soda (organic)
1/2 tsp. baking powder (organic)
1/3 cup Chocolate chips *Optional
Combine first 5 ingredients together, sift together all the dry ingredients in a separate bowl and add slowly to the wet ingredients. *Add chocolate chips. Pour and scoop (mixture won't be quite as running as "regular" banana bread) into greased bread pan and bake at 350 for 45 - 55 minutes. DONE!
P.S. If you want less calories/sugar try cutting some of the honey out and adding a little more vanilla creme stevia. It works well and tastes just as sweet.
I get all the ingredients for this recipe from Real Foods Market in Orem, but if you live further away all the ingredients can be found at Whole Foods as well.
Does Eric really eat the whole piece of bread or does he just pick out the chocolate chips?

Whatever Laurel, He won't eat any of it cause he "hates" bananas. PIckiest Eater Ever!
