Happy Easter!
We had a great weekend. Of course it always goes by so fast.
First a Bishopric dinner Friday night filled with pasta and fro yo. I can't believe we've almost been in that singles ward for almost a year! We'll be back in our family ward in just a few weeks.
The next morning Eric enjoyed a nice quiet sleep before a day at work while I headed out for a long run. That night was spent at our ward's "Cinderella Ball." Which led to a late Saturday night before an early morning Sunday. Usually not a good combination but the fact that it's Easter Sunday made this early morning a little better.
After a little mix up of what we would be doing for our Easter dinner, Eric and I decided to make it our own. I was pretty proud of myself for making ham, green beans, deviled eggs and Eric's favorite funeral potatoes so I decided to take it all the way and whipped up a pretty awesome coconut cream, chocolate mint pie. It tastes great and is oh so healthy. No really though.
We ended the day with a scooter ride and admiration of the blossoms.
